Ever wondered what it might be like working in a busy kitchen responsible not just for cooking for one or two, but dozens of people? Martyn, a cook at Emmaus South Lambeth gives us some insider low down...
There’s a lot to think about! For a start, everyone has different tastes and some people can’t eat certain things, so it’s important to ask people what they like to eat, and can eat. Make sure the food goes out on time, or you’ll have every one moaning!
We cook all sorts of things in our kitchen, like a good roast dinner with peas, cabbage and roast potatoes, curry, and neck of lamb in red wine with mushrooms, garlic and mashed potato. We use a very large mixing machine to make mashed potato for so many people!
Hygiene is very important. Food must be cooked properly all the way through, all the surfaces have to be sprayed with anti bacterial cleaner, and the floor has to be swept twice a day. We even have different coloured chopping boards for different things. For example, we use red boards for raw meat.
When you prepare a nice meal everyone says they love it, and say ‘thank you’. They ask you when you will be cooking that meal again!
